Indore, March 13 With the conflict in West Asia disrupting the supply of commercial LPG, hotels and restaurants in Madhya Pradesh are being forced to adopt traditional cooking techniques like the "tandoor" and rely on electric appliances to keep their businesses running.

The Madhya Pradesh Hotel Association (MPHA) has advised eateries to switch from gas-cooked rotis to traditional wood-fired "tandoors" and create "crisis menus" to ensure their survival.

The association has issued an advisory asking establishments to prioritize dishes that require less gas or shorter cooking times.

Recent geopolitical developments have disrupted the supply of commercial cooking gas, making it necessary for hotels and restaurants to conserve fuel to keep their businesses running, the advisory stated.

"Rationalize restaurant and room-service menus by prioritizing dishes that require less gas or shorter cooking times. Temporarily suspend or reduce menu items that require long simmering, deep frying, slow cooking, or multiple burners," it said.

It also suggested introducing quick-cooking "crisis menus" and increasing the use of electricity-powered kitchen appliances.
